While I'm feeling a lot better about my iPod, and maybe a tad better about iTunes, I'm still not a fan of iTunes, but need to use it anyways. But while fiddling with it, in the deep dark recesses of the preferences, I found there's a way to convert your M4A files (AAC) to MP3s. Click Edit > Preferences > Advanced (tab) > Importing (subtab) and you'll see this:

If you choose MP3 as the encoder, then back in iTunes the right-click context menu will give you the option to convert M4A files to MP3s. (Or other formats, but not music from the iTunes music store.)
It's completely non-obvious, but it is there. It would have made sense to make the options easier to access, but then again I'm working on Windows and probably just can't fathom the infinite wisdom of how making things harder to use actually makes them easier. :) But then again, many other players don't give you that option at all, so I shouldn't complain.
Anyways, I went back to the iTunes help file, and it is in there. Now if it were only possible to convert iTunes music store music to another format... :(

Cool. I hope it helps them out. I was a bit puzzled with it for a while myself and looked deeper into iTunes.
